Ingredients
- 1.5 lb (680g) ground beef, 80/20 chuck
- 4 large sesame seed hamburger buns
- 8 tomato slices
- 1 cup (70g) shredded or torn iceberg lettuce
- 12 thin rings white onion
- 12 dill pickle slices
- 4 tbsp (60g) mayonnaise
- 4 tbsp (60g) ketchup
- Kosher salt and black pepper
Instructions
- Divide the beef into 4 wide patties, each about 1/2" thick and slightly larger than the bun (they shrink on the grill). Press a dimple in the center of each.
- Set up a two-zone grill (or preheat a grill pan) until very hot. Season the patties right before cooking.
- Grill the patties over direct high heat 3โ4 minutes per side for real char, moving them to the cooler zone if flare-ups start. Cook to 160ยฐF (71ยฐC) internal.
- Toast the cut sides of the buns over the cooler zone.
- Spread mayo on the crown and ketchup on the heel, then build with the fresh toppings (see assembly) and serve at once.
