Drop the bun, keep everything that actually makes a burger taste like a burger. Beef, bacon, and cheese are exactly what keto is built for.

Keto is one of the easiest diets to build a burger around, because the parts keto wants โ€” fat and protein โ€” are the parts of a burger that were never the problem. The carbs were always hiding in the bun and in sugar-sweetened sauces like ketchup and BBQ sauce. Pull those two things out, wrap everything in crisp lettuce instead, and you have a burger that is not a compromise โ€” it is just a really good burger that happens to fit the diet.

๐Ÿงพ Keto Burger โ€” Recipe Card

Ingredients

  • 1.5 lb (680g) ground beef, 80/20 chuck
  • 8 slices bacon
  • 4 slices sharp cheddar
  • 8 large iceberg or butter lettuce leaves (for wrapping)
  • Keto burger sauce: 1/2 cup mayo + 1 tbsp yellow mustard + 1 tsp vinegar + pinch of salt (no ketchup)
  • 1 avocado, sliced (optional, extra richness)
  • Sliced tomato, red onion, dill pickles
  • Kosher salt and black pepper

Instructions

  1. Cook the bacon in a skillet until crisp. Set aside on paper towels and keep a little of the fat in the pan.
  2. Form the beef into 4 dimpled patties. Season both sides with salt and pepper just before cooking.
  3. Sear the patties in the bacon fat over high heat, undisturbed, 3 minutes.
  4. Flip, top with cheddar, and cook 2โ€“3 minutes more to 160ยฐF (71ยฐC) internal, covering briefly to melt the cheese.
  5. Whisk together the mayo, mustard, vinegar and a pinch of salt for the keto sauce.
  6. Lay out 2 lettuce leaves per burger, overlapping like a bun.
  7. Build: sauce, patty with cheddar, bacon, tomato, onion, pickles, and avocado if using.
  8. Fold the lettuce around the burger like a wrap, or eat it open-faced with a fork.

๐Ÿ‘จโ€๐Ÿณ Tips for the best Keto Burger

  • Sugar sneaks into cured bacon and into ketchup/BBQ sauce โ€” check labels or use the mustard-based keto sauce above instead.
  • Use full-fat mayo and cheese. Keto wants the fat; low-fat versions work against you here.
  • Large butter lettuce or iceberg leaves hold up best for wrapping without tearing.
  • Avocado adds extra creamy fat and helps it eat like a "real" burger instead of a diet substitute.

๐Ÿฅ— Make it fit your diet

Already Keto / Low-Carb + Gluten-Free-friendly โ€” here's how to take it further:

๐Ÿฅ› Dairy-Free

Skip the cheese or use a dairy-free alternative, cook in oil instead of butter, and stick to dairy-free sauces (most mayo, ketchup, and mustard are fine).

๐Ÿƒ Paleo / Whole30

Wrap it in lettuce (no bun), skip the cheese, and use compliant sauces with no added sugar, soy, or dairy. For Whole30, make sure any bacon is sugar-free.

Frequently asked questions

Is a burger keto without the bun?

Yes โ€” the beef, bacon, and cheese are all naturally keto. The bun and sugary sauces are the only parts that aren't, so removing them is all it takes.

What can I use instead of a bun for a keto burger?

A lettuce wrap (sometimes called "protein style") is the easiest option. Portobello mushroom caps or a low-carb cloud-bread bun also work well.

How many carbs are in this keto burger?

Very few โ€” mostly from the onion, tomato, and pickles, typically only a few grams net carbs per burger depending on portions.
