Instructions

  1. Cook the chopped bacon in a heavy skillet over medium heat until browned but not fully crisp. Remove with a slotted spoon and pour off all but about 1 tablespoon of the fat.
  2. Add the sliced onions to the pan and cook slowly, stirring often, 12โ€“15 minutes until soft and deeply golden. Stir in the garlic for the last minute.
  3. Return the bacon to the pan and add the brown sugar, vinegar, coffee, and maple syrup. Stir to combine.
  4. Simmer gently, stirring frequently, 20โ€“25 minutes until the liquid reduces to a dark, sticky, jammy consistency.
  5. For a smoother spread, pulse briefly in a food processor. Season with black pepper. Serve warm or at room temperature.
