This is an independent, inspired-by take on the flavor profile people love in a Big Mac โ€” the tangy special sauce, the shredded lettuce and pickle crunch, and that unmistakable three-layer stack. The restaurant's actual formula is proprietary, so we're not claiming to reproduce it exactly; instead we recreate the profile with two thin, well-seared beef patties and a from-scratch sauce that lands in the same tangy-sweet territory.

What the original is known for

The Big Mac is known for its double-decker build on a three-piece sesame bun, with a tangy-sweet "special sauce," shredded iceberg lettuce, and pickles. The flavor is defined more by the sauce and the layered assembly than by the beef itself.

๐Ÿงพ Big Mac-Inspired Burger โ€” Recipe Card

Ingredients

  • 1 lb (450g) ground beef, 80/20 chuck
  • 4 sesame seed hamburger buns, plus 4 extra bun bottoms (for the middle "club" layer)
  • 1 cup (70g) shredded iceberg lettuce
  • 4 slices American cheese
  • 2 tbsp (20g) finely diced white onion
  • 16 dill pickle slices
  • Kosher salt and black pepper
  • For the special sauce: 1/2 cup (115g) mayonnaise, 2 tbsp (30g) sweet pickle relish, 1 tbsp (15g) yellow mustard, 1 tsp white wine vinegar, 1 tsp sugar, 1 tsp paprika, 1/2 tsp onion powder, 1/2 tsp garlic powder

Instructions

  1. Make the special sauce first: whisk together all the sauce ingredients and refrigerate at least 30 minutes so the flavors meld. (Or use our ready-made recipe โ€” see the sauce note below.)
  2. Divide the beef into 8 thin patties, each slightly wider than the bun and about 1/4" thick. Season both sides with salt and pepper.
  3. Sear the patties on a hot griddle or cast iron for about 2 minutes per side until deeply browned, adding a slice of American cheese to 4 of them just after flipping. Cook to 160ยฐF (71ยฐC) internal.
  4. Lightly toast all the bun pieces (you need a top, a middle, and a bottom for each burger).
  5. Assemble each burger in the classic three-layer order (see assembly below) and serve immediately while warm.

๐Ÿ– The patty

Two thin, griddle-seared 2 oz (57g) patties per burger โ€” the Big Mac profile is about thin, crusty patties and layered sauce, not a thick pub patty. Smash them slightly wider than the bun so they crisp at the edges.

๐Ÿฅซ The sauce

The tangy-sweet "special sauce" is the heart of this flavor. Use our dedicated Big Mac-Inspired Sauce recipe for the full breakdown, or the quick version in the ingredient list above.

๐Ÿ” How to assemble

  1. Bottom bun โ†’ special sauce โ†’ a little diced onion โ†’ shredded lettuce โ†’ cheese-topped patty.
  2. Middle "club" bun โ†’ more special sauce โ†’ onion โ†’ shredded lettuce โ†’ pickle slices โ†’ second patty.
  3. Crown with the sesame top bun. Press gently and eat right away.

๐Ÿ” Substitutions & variations

  • No middle bun? Split a second bottom bun, or skip it for a single-decker "junior" version.
  • Swap iceberg for shredded romaine if that's what you have โ€” you want crunch and shred, not big leaves.
  • Sweet relish can be replaced with finely minced dill pickle plus a pinch of sugar.
  • For gluten-free, use a GF bun and confirm your relish and mustard are GF.

Frequently asked questions

Is this the real McDonald's Big Mac recipe?

No. This is an independent, inspired-by recipe. McDonald's actual formula is proprietary and we are not affiliated with or endorsed by the company. We recreate the tangy-sweet, layered flavor profile, not an exact copy.

What makes the special sauce taste right?

The balance of mayo, sweet relish, mustard, a little vinegar and sugar, plus paprika, onion and garlic powder. See our Big Mac-Inspired Sauce for the tuned ratios.

Why two thin patties instead of one thick one?

The profile relies on thin, well-seared patties with lots of crust and a lot of sauce contact. Two thin patties give you more browned edges and match the layered build better than one thick patty.
