- 1.25 lb (570g) ground beef, 80/20 chuck
- 2 large yellow onions, thinly sliced
- 3 tbsp butter, plus more softened for the bread
- 8 slices rye bread
- 8 slices Swiss cheese
- 1 tbsp neutral oil
- Kosher salt and freshly ground black pepper
Instructions
- Caramelize the onions first: melt 2 tbsp butter with the oil in a skillet over medium-low, add the sliced onions and a pinch of salt, and cook, stirring occasionally, 20โ25 minutes until deep golden-brown and jammy. Add a splash of water if they stick. Set aside.
- Divide the beef into 4 thin, wide, oblong patties sized to match your rye slices โ thin so they cook fast and fit the bread. Season both sides with salt and pepper just before cooking.
- Wipe the skillet, raise the heat to medium-high, and sear the patties 2โ3 minutes per side to a good crust and 160ยฐF (71ยฐC) internal. Set them aside.
- Build each melt: butter the outsides of two rye slices. On the unbuttered inside, layer Swiss, the patty, a generous pile of caramelized onions, another slice of Swiss, and the second rye slice, buttered side out.
- Wipe the skillet and set it over medium. Griddle each sandwich 3โ4 minutes per side, pressing gently, until the rye is deep golden and crisp and the Swiss is fully melted.
- Cut in half on the diagonal and serve hot, while the cheese still pulls.
