Instead, you press the seasoned beef into a single thin sheet on a sheet pan, bake it flat, drain it, blanket it in cheese, and sandwich it โ€” still in one piece โ€” inside a full slab of sweet rolls, sliced only after it comes out of the oven glossy with butter. Ingredients

  • 1.5 lb (680g) ground beef, 80/20 chuck
  • 1 twelve-count package Hawaiian sweet rolls, unsplit
  • 6 slices American cheese

  • 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp garlic powder
  • 3 tbsp butter, melted
  • 1 tsp sesame seeds (optional, for the tops)

Instructions

  1. Heat the oven to 400ยฐF (200ยฐC). Line a sheet pan with parchment.
  2. Mix the beef with the salt, pepper, garlic powder and diced onion โ€” sliders are the exception to the never-mix-into-beef rule, since thin party patties need seasoning everywhere.
  3. Press the beef into a single flat sheet on the pan, just larger than the footprint of your roll slab and about 1/2" thick. Dock it all over with a fork.
  4. Bake 15โ€“18 minutes until cooked through to 160ยฐF (71ยฐC). The beef shrinks and releases juices โ€” carefully pour those off (save a spoonful).
  5. Slice the whole roll slab in half horizontally without separating individual rolls. Lay the bottom slab on a second parchment-lined pan.
  6. Set the beef sheet onto the bottom slab. Top with the cheese slices edge to edge, then pickles, then the top slab of rolls.
  7. Brush the tops with melted butter (mix in the reserved spoonful of beef juice โ€” trust it), scatter with sesame seeds, and tent loosely with foil.
  8. Bake 8โ€“10 minutes until the cheese is melted and the tops are glossy. Slice along the roll seams into 12 sliders and serve hot.
